Yummy Supper

I tried this menu from an old Taste of Home magazine. It was pretty simple and turned out yummy too:
Strawberry Orange Smoothies
Hot Italian Ham Subs
Zucchini Mozzarella Medley
Fruit Salad

Hot Italian Ham Subs
  • 1 cup Italian dressing
  • 4 buns, split
  • 12 slices deli ham
  • 12 slices cheese
  • 1 medium tomato, sliced
  • 1/4 cup fresh cilantro, chopped
  • 4 slices onion

Generously drizzle both sides of buns with dressing. On bun bottoms, layer the ham, cheese, onion, and tomato. On bun tops, sprinkle the cilantro. Place on baking sheet. Broil 6-8 inches from the heat for 2-3 minutes or until cheese is melted. Place bun tops over bottoms. Serve.

Zucchini Mozzarella Medley

  • 3 cups sliced zucchini
  • 1 cup sliced onion
  • 1 garlic clove, minced
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/8 tsp salt
  • oil or butter
  • 1 medium tomato, cut in wedges
  • 1 cup shredded mozzarella cheese

In a large skillet, saute the veggies (except the tomato) and seasonings until crsip-tender. Gently stir in tomato. sprinkle with cheese. Remove from the heat; cover and let stand 1-2 minutse or until cheese is melted.

Straberry Orange Smoothies

  • 3 cups orange juice
  • 1 carton (8 oz) strawberry yougurt
  • 6 fresh strawberries
  • 1 can (8 oz) crushed pineapple
  • 1 medium firm banana, cut into chunks

Place ingredients in blender. Cover and process until blended. Serve immediately.

Fruit Salad

  • Cut up a whole canteloupe into chunks
  • Wash a bunch of red grapes

Toss into a nice bowl.

P.S. I didn't have Italian dressing on hand, so used this recipe, which was better anyway:

Italian Dressing Mix

  • 1 tbl garlic salt
  • 1 tbl onion powder
  • 1 tbl white sugar
  • 2 tbl dried oregano
  • 1 tsp black pepper
  • 1/4 tsp dried thyme
  • 1 tsp dried basil
  • 1 tbl dried parsley
  • 1/4 tsp celery salt
  • 2 tbl salt
  1. In a small bowl, mix together all ingredients. Store in a tightly sealed container.
  2. To prepare dressing, whisk together 1/4 cup white vinegar, 2/3 cup oil, 2 tbl water, and 2 tbl of the dry mix.
