German Chocolate Cake


Yesterday a friend of ours had a surprise birthday party, and we were asked to bring the cake. I was told his favorite was German Chocolate, so I looked up a recipe and made this one....it turned out yummy. I was pleased because I had all the ingredients on had....including sour milk! ha ha

Wednesday Night Lesson - God is our Protector

Last night we learned about God is strong enough to protect us. 5 kids showed up, so a smaller class than we have been having during the summer. Hopefully the others won't get out of the habit of coming! Here is our outline:
God is our Protector
  1. Told the story using lego armies and Iraelites and a blue jello Red Sea (including a shark, octopus, and aligator!).
  2. Brought out Tommy the puppet, who wanted to know why the legos were all crumpled under blue jello. He sang the song "How Did Moses Cross the Red Sea?"
  3. Sang 2 other songs from our story, "Fear Ye Not, Stand Still," and "I Will Sing Unto the Lord for He has Triumped Gloriously..."

This is the Egyptians blocked by God's cloud before crossing our blue jello sea.

4. Removed the legos and made Egyptian stamped signs spelling out "Protector" in heiroglyphics. (this stamp kit was at our public library)

5. Ate snack and made "Red Sea" water to drink (red cool-aid)

6. Read the Bible story straight from the Bible, Exodus chapter 14, kid's version, and re-sang parts of the songs that are from that chapter.

7. Ended with prayer and clean up

What I Can Do...

A rainy morning.

A cloudy sky.

A messy house.

This morning, I must say, I have the "blahs" the "blues" or whatever you'd like to call it. I look around at my house and just feel un-motivated. I see all that I cannot do...
  • I cannot keep the laundry ironed
  • I cannot keep up with the dishes in the sink
  • I cannot think up new and creative meals to make on short notice
  • I cannot interior decorate
  • I cannot keep the plants watered
  • I cannot keep the living room un-cluttered
  • I cannot spend as much time reading in the morning as I'd like
  • I cannot teach as would be best
  • I cannot love others unselfishly

Every time I get things cleaned up, it just happens again it seems. I cannot keep up.

But, as I sit here and think of all I cannot do....and how discouraging it is sometimes....I think that perhaps I should focus on something more positive.

Maybe I cannot keep the house perfect like I would like, maybe I cannot do all the things I think I should in a certain time frame....but there is Someone who can do all things and more. Here are some things He can do...

  • God can make the sun rise every morning
  • God can make the sea calm from a storm
  • God can create the mountains and the seas
  • God can make the angels sing
  • God can create the whole world in 6 days
  • God can save 3 men from fire
  • God can drown a whole army of soldiers in a moment
  • God can hear and answer all the prayers of every person praying around the world at the same time
  • God can see the big picture
  • God can make the eagle soar
  • God can know the laws of the universe and regulate them
  • God can shout at a cloud and make it rain
  • God can name every single star, and remember it's name
  • God can love me, even when I'm not perfect

"I can do all things through Christ who strengthens me."

Unsuccessful Project

So, I had a little time last night, and sat daydreaming on the couch in our living room. I was contemplating our "lovely" green shag carpet. While it is nice and soft, and you can pretend it's grass, and it's great for rolling from one end to the other on your tummy, it's maybe not the color I would choose on my own.


I was thinking about if I redecorated....what would I do? What color carpet would I pick, how would I paint, what would I frame, etc. Then I realized, I actually could re-decorate even with the green carpet! I thought to myself, a violet theme - purple with green leaves, would be so pretty! Even a little black trim on things would be classy.



So I went to the library and got a whole stack of books out about interior decorating. I surfed online for ideas. I checked at our local downtown stores for violet tea cups and material. I was excited!



I came home last night, determined to put my hand to work in the living room. While I had many ideas and small touches to do, I thought I'd start with our couch, and just get and idea of what it would look like.

Sadly, this is what it looked like. Now mind you, I didn't iron the cover-up before temporarily pinning it in place, since I just wanted to get an idea. But, even without the wrinkles, I don't think it's what I had in mind! After about 30 to 40 minutes of getting it "just right," I think that maybe that wasn't the best use of my time.


I had envisioned small embroidered violets gracing a cream colored couch with a couple classy black lines on the bottom. To match, I wanted to sew a black and purple runner for our small table and put my cream and crystal candles on display. I had plans of getting purple or white gauze to add a sawg to the top of our green curtains, and to hang up some pretty pictures of violets and Bible verses in a black frame on the wall. In addition, I was sure I could find a nice tea cup or vase or such to set somewhere to bring out the violet theme.




It was not to be.

The couch will be "un-done" tonight.

Nice concept though. Maybe one day, when my interior decorating energy lasts more than an hour, I will actually acomplish something! But for now, I think our living room will do quite nicely as it is!

What I did Yesterday

Zucchini Season




The other day I went to the library and got out a stack of neat books. One happened to be a cookbook...a Zucchini cookbook. It is the season!



Last night we tried a couple recipes from it, and I think they were both very good. So, I'm looking forward to more of the recipes in the book, assuming they will be good as well!



We made Thai-Style Coconut Curry with Chicken and Zucchini, rice, papadam, and Zucchini Raita (Indian salad).



Here is the Curry recipe (I'd recommed that over the Raita):

Thai-Style Coconut Curry




  • 2 Tbl peanut or canola oil
  • 3 Tbl yellow Thai curry paste or 2 Tbl curry powder
  • 1 large onion, halved and thinly sliced
  • 1 1/4 pounds boneles, skinless chicken breasts or thights, cut into 1/4 inch strips
  • 2 cloves garlic
  • 1 jalapeno or serona pepper, sliced
  • 1 red bell pepper, sliced
  • 1 tsp minced fresh ginger
  • salt and black pepper to taste
  • 3 small zucchini, qaurtered and sliced
  • 1 1/2 cups coconut milk
  • 1/4 cup chopped cilantro
  • 2 Tbl lime or lemon juice
  • Hot cooked rice or noodles
  • 1/2 cup roasted peanuts
  1. In a large saucepan, heat the oil over medium heat. Add the curry paste and onion. Saute until the onion is translucent, about 5 minutes.
  2. Add the chicken, garlic, peppers, and ginger. Saute until the chicken is cooked through, about 5 minutes. Add salt and pepper.
  3. Stir in the zucchini and mix until combined with the spices. Stir in the coconut milk, cilantro, and lemon juice. Bring to a simmer. Simmer until the zucchini is tender, about 10 minutes. Taste and add salt and pepper, if needed.
  4. To serve, spoon a bed of rice or noodles into individual pasta bowls. Top with the chicken, vegetables, and sauce. Garnish with the peanuts.

Okay, so I told you I'd post those recipes that we brought to the international potluck. So, here I am finally getting around to it. We ended up bringing Zucchini Bread, Fried Rice, and Chicken Curry.

Zucchini Bread


  • 1 cup sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp soda
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 1 cup grated, unpeeled zucchini
  • 1/2 cup chopped nuts (optional)

Beat sugar, oil, eggs until well blended. Add sifted dry ingredients and grated zucchini alternately to sugar mixture. Beat well. Stir in nuts. Pour into a greased bread pan. Bake @ 350 degree F for 50-60 minutes. Cool in pan 15 minutes.



Rena's Fried Rice


Seasoning:

  • 2 tsp sesame oil
  • 1/2 tsp salt
  • 2 Tbls soy sauce
  • 2 tsp sugar
  • 2 tsp ketchup
  • 1 tsp curry powder
  • 1/2 tsp pepper

Main Ingredients:

  • 2-3 cups cooked rice
  • 1 cup corn
  • 1/2 cup chopped carrots
  • 3 stalks spring onion tops
  • 1 bell pepper
  • 1/2 - 1 cup shrimp or hot dogs or sausages
  • mushrooms, cut up
  • 2-4 oz slivered almonds (for top_
  • 3 beaten eggs
  • dash salt (for eggs)
  1. In a large fry pan, heat 2 Tbl oil and fry the eggs with salt. When golden brown, cut and put aside.

  2. Add 2 Tbls oil in pan. Fry veggies and meat until done.

  3. Add cooked rice. Stir with veggies. Pour in seasoning sauce.

  4. Turn off stove and stir in onion.

  5. Mix in eggs.

  6. Serve in big bowl with slices of cucumber and slivered almonds on top.

Serves: 4-5 people

Wednesday Night Lesson - God Provides

For the first time in a long time, our class actually was shorter than the alotted time! It was a fun class....and I think the kids were able to follow it easier (and hopefully retain it better!) Here is what we did:





God is our Provider (Ex. 13 and Ex. 16:1-36)



1. We set up a tent in the backyard, and got our attendance calendar and Bibles ready.

2. We blew up black balloon "quail," and hid them on the ceiling. (pre-class). We also laid out some "mana" and shut the basement door so the kids wouldn't find it ahead of time.

3. For class, we started outside in the tent. We talked about why we bring our Bibles to class. (I had promised them a Dinosaur party if they could bring their Bibles every week. After thinking about it, I realized they probably are bringing their Bibles for that reason only. So....we talked about why we bring our Bibles so we can USE them at church....that we come to church to learn God's word, and if we don't bring our Bibles, how can we learn God's word? I also reminded them they can read it at home, not just at church, and that they themselves can read it....not just rely on us teachers)

4. We told the story of the Isralites wandering in the dessert. How God led them by cloud and fire, and how He provided mana and quail for them.

5. We played follow the leader. The kids were the Israelites. Keren and I were cloud and fire respectively.

6. We "followed" God's cloud to find mana....in the basement.

7. We "followed" God's pillar of fire at night, and saw how quail fell from the sky!

8. We finished by eating mana, playing with quail, and prayer.

Wednesday Night Lessons - God is All-Knowing

I forgot to post this lesson outline last week, so here it is now.

God is All-Knowing (Psalm 139)

For this lesson, we used Psalm 139 as our "story." We simply went verse by verse and did activities along those lines. We first read through the whole chapter in the NIV version, and then read it through in the Message Version.

Vs. 1 O Lord, You have searched me and You know me.
  • We made "interview" sheets for each kid. We had them pair off and interview each other, finding out interesting things about the other person (like birthdays, families, favorite foods etc)
  • We talked about how now we now more about each other, but God knows everything about us. What we like and what we don't like. What we do and what we don't do.

Vs. 2 & 3 You know when I sit and when I rise. You percieve my thoughts from afar. You know my goings out and my lying down. You are familiar with all my ways.

  • We played a guessing game for this. One person was "it," the rest sat in chairs in a circle. The it person took a good look at us all, then went out of the room for a count of 10. Meanwhile, everyone changes places/positions. When the it person came back in, they had to guess what was different.
  • We talked about how God knows what we do when we do it. He is familiar with all our ways.

Vs. 4 Before a word is on my tongue, You know it completely, O Lord.

  • We looked at a blank piece of paper (on which I had pre-written, in invisible ink, God is All-Knowing). We then made the message appear (or tried at least....it didn't work).
  • We talked about how God knows what we are going to say before we even say it.

We ate snack, and ended with prayer.

Interesting Recipe

I am browsing through a world cookbook for kids. It's pretty neat, and I always enjoy looking at new recipes, especially international.

Tomorrow night we are having an international potluck for the new international students arriving in Bemidji. It's always quite a crowd of excited/exhausted talking-all-at-once people. Maybe this year I'll do better at remembering names?

Here are the food items Mathew and I will be bringing:
  • A large dish of chicken curry
  • A large pan of vegetarian fried rice
  • Zucchini bread
  • Salsa & chips or some squash bake/stir fry/etc

I will post recipes...after I have succesfully tried and made the above!

Meanwhile, you may try out this recipe for me and let me know if it is any good. It is from the book I am reading now,

Brazilian Dreams (Sonhos)

"Dreams are little puffy pastries, crispy on the outside adn hollow inside."

  • 1/2 cup water
  • 1 1/2 teaspoons sugar
  • pinch of salt
  • 1/2 cup flour
  • 2 eggs
  • oil for frying
  • powdered sugar and cunnamon, sifted together

Place the water, sugar and salt in a saucepan, bring to a boil. Add the flour and stir quickly until the mixture forms a ball that doesn't separate. Remove from the stove and cool. Add an egg and beat the mixture with a spoon until smooth. Add the other egg, beating the mixture thoroughly. Now drop small balls of the mixture from a teaspoon into deep, hot oil. Take out when golden-brown, drain on absorbent paper, and sprinkle with sifted powdered sugar and cinnamon.

Abbi and I have been working on a new church web site. Other than yesterday (when the computer locked up on me and messed up my fonts and stuff and won't let me change it back), it has been lots of fun and fairly easy.

In my "how-to" hunting, I came across a couple really fun sites. One helps you make your own logos. Like these:

Can You Guess...What Is This?

To a 2-L jacketed round reactor vessel (reactor #1) with an overall heat transfer coefficent of about 100Btu/F-ft2-hr, add ingredients one, two and three with constant agitatino. In a second 2-L reactor vessel with a radial flow impeller operating at 100rpm, add ingredients four, five, six, and seven until the mixture is homogenous. To reactor #2, add ingredient eight, followed by three equal volumes of the homogenous mixture in reactor #1.

Additionally, add ingredeints nine and ten slowly, with constant agitation. Care must be taken at this point in the reaction to control any temperature rise that may be the result of an exothermic reaction.

Using a screw extrude attatched to a #4 nodulizer, place the mixture piece-meal on a 316SS sheet (300 x 600 mm). Heat in a 460k oven for a period of time that is in agreement with Frank & Johnston's first order rate expression (see JACOS, 21, 55), or until golden brown. Once the reaction is complete, place the sheet on a 25C heat-transfer table, allowing the product to come to equilibrium.

Weekend Camping Trip





We had such a nice and restful trip this weekend. Rather spur-of-the-moment, it was hard to find a campsite near Duluth that wasn't full to bursting!


After praying about it, I found one called Amnicon State Park...over on the Wisconsin side. It turned out to be a great place to camp.


We were about 15 minutes away from Duluth/Superior, and the park had Amnicon River flowing through it, with a couple waterfalls. Nothing huge, but pretty all the same! We even found some wild blueberries!


We ended up having to move camp Saturday night, but got a better site because of it....right next to the river and away from the other campers. How quite and peaceful! And no bugs!


We (I) ate lots of smores while we were there. We all took naps on Saturday afternoon. We went for a hike and took lots of pictures. We ate chocolate malts. And we explored Duluth just a little.

We stayed through Sunday afternoon, so had "church" there at the campsite together. That was fun.

We also played frisbee, and Sammi and I played in the mud. We ate Taco Hotdish and Hobo Dinners and French Toast. Yum!
We can't wait for another trip!

Wednesday Night Lesson - God is Powerful

I can't believe I forgot to take pictures of our class last night. Sorry about that...you'll just have to try and plow your way through my outline below!

I think the class had fun, but I hope they learned from it too! We had our 3 regular wound up boys, plus 3 other rambuntcious kids. I haven't always taught classes with the boys in majority, so it is definitely an adjustment for me! Knowing that I would be the only teacher last night, with 7- 10 kids, mostly boys, I did gear my lesson that way on purpose! :)

To give you a hint of the fun we had, here is the list of supplies I brought to class:
  • 10 Potatoes
  • 30 Straws
  • 10 newspaper sheets
  • 10 small dishes of baking soda
  • 10 small cups of vinegar
  • 10 trays
  • 4 funnels
  • 3 books
  • 2 yardsticks
  • 10 paper cups
  • 10 red balloons
  • 1 rope
  • 1 bucket of water
  • 20 paper towels
  • 1 pitcher of water
  • 10 oranges
  • 1 thing of red food coloring
Here is what we did:
God Is Powerful
1) How strong are YOU?
What is power? Sometimes it's known as strength....someone who is very strong is very powerful.
  • Strong Straw (give each kid a potatoe and two straws. have them try and stab the potatoe with the first straw. It should be hard to do/straw is wimpy. Have them cover the top of the straw with their finger and then stab the potatoe again. Because the air is sealed in the straw, it makes the straw stronger and punctures right into the potatoe! Air is powerful)
  • Strong Paper (Have each kid see how many times they can fold a single sheet of newspaper. It should be about 7 times....and then the paper is too thick and we are too weak to fold it any more. We might think we're strong, but not as strong as God!)

2) What things are powerful?

What are some things you know today that are powerful? How about natural things? Wind, water, fire, volcanoes, etc

  • Volcanoes (by making a mixture of baking soda and vinegar, you will get a volcanic eruption. We colored our vinegar red, and put it in our paper cups, letting it overflow into our trays. Volcanoes are powerful)
  • Isaiah 40:18-26 "To whom, then, will you compare God? What image will you compare him to?...Lift your eyes to the heavens: who created all these?..." God is powerful. In fact, we think volcanoes are powerful....God MADE the volcanoes! He is the most powerful of all.
  • Job 9:4, Jer 32:17, 1 Ch 29:11

3) What are some powerful things that God has done?

  • Calmed a storm. (Pour water in each kids tray, and encourage them to blow "waves" in it with their 3rd straw. Read Mark 4:35-41. God powerfully stopped the wind and waves!)
  • Raised the dead. (For this experiment, we set up the 3 books....two in one stack, the 3rd 30inches away from it. We laid two yardsticks from one stack to the other, making a sloping V shape -high stack to low. We taped two funnels together and set them at the bottom of the V. They rolled UP! Just like the funnels did backwards of what is normal, so God powerfully raised Jesus from the dead. Acts 2:23)

4) God is Powerful. He can do the impossible.

  • Impossible tasks. (For this demonstration, each kid grabbed a paper cup and stood near a blank wall. I asked them to do four things.... 1. Pat your cup and rub your stomach at the same time 2. Hop up and down while whistling into your cup 3. Say "Toy Boat" 3 times as you tap your cup 4. Stand with left foot and left shoulder up against the wall, lift your right foot without falling over. If done correctly, the last task is impossible.)
  • Philp. 4:13

5) God has a powerful enemy too.

God is powerful. But God has an enemy too. His name is Satan or the Devil. He is powerful too, but not as powerful as God. Because God made us, and if we love God, the Devil hates us too. We need God's strength and power to protect us.

  • Balloon Race. (Line up and throw uninflated balloons. See whose went the farthest. Now, blow up the balloons and let go. See whose shot the farthest. We are like the first balloon, without God. We try and do great things and be important and achieve so much. God wants to fill us up with Himself. When we let Him, we can go farther, faster, and have an amazing life, letting God's power work in us.)
  • Dry Paper. (Stuff a dry paper towel into the bottom of your paper cup. Make sure it doesn't fall out when you turn it over. Now, hold your cup over the bucket of water. Plunge your cup, straight down into the water, hold it a second, and take it out. The paper will still be dry! The air pressure protected the paper. God is like that air. He protects us from harm. We might not be able to see Him, but that doesn't mean He doesn't exsist. He is always there, ready to be our defender. He is powerful.)
  • Tug of War. (Take the rope out. Have a tug of war game, reminding the kids that there is a battle going on between God and the Devil. God will win. But the devil wants you to loose. Ephesians 6:10-18, 2 Cor 10:4)

A Pirate Evening

Since my cousins are up, we thought it'd be fun to have a special Pirate themed night. We planned to go over to my parents for supper.


In the morning, I made up this Pirate Cake to take.



We all dressed up like pirates and I planned a treasure hunt.

We picked up the kids after work, to take them on the hunt and walk the dog. Here are the clues for a Scavenger Hunt that I made up.

It led to "treasure" in the mailbox. (Chocolate coins)

Then we went back for supper and games.

The cake was very fun....I got the idea for decorating from this web site. I used the flag clip art by cutting out the black outlines, leaving the white, laying it on my cake and using chocolate sprinkles to fill it in. The recipe is quite simple, for both the cake and the frosting:
Chocolate Crazy Cake
  • 3 cups flour
  • 2 cups sugar
  • 2 tsp soda
  • 1 tsp salt
  • 6 Tbl cocoa powder

Mix in cake pan (13 x 9 inch) thoroughly. Make holes and pour in:

  • 3/4 cup oil
  • 2 tsp vanilla
  • 2 Tbl vinegar
  • Pour 2 cups cold water over all

Mix well. Bake at 350 degrees for 30-40 minutes.

Grandma's Whipped Cream Frosting

Put in saucepan:

  • 2 1/2 Tbl flour
  • 1/2 cup milk

Cook and stir over medium heat until it separates from the pan. Keep stirring for 1 minute. Cool completely. (To hurry cooling, cover pan and set in cold water)

Cream together:

  • 1/4 cup margarine
  • 1/4 cup shortening
  • 1/4 cup sugar
  • 1 tsp vanilla

Add cooled flour paste and beat at fast speed until thoroughly mixed and consistency of whipped cream.

Double the recipe for a layer cake.

Indoor Picnic


Yesterday we had planned to have a picnic, but it was very, very hot outside.
So, we had an "indoor" picnic! We found a "butterfly," moved some potted plants around, laid down a blanket on my "green grass carpet," got some "breeze" blowing, and had a lovely time!

National Night Out

Today is National Night Out. I meant to publish this a little earlier, but I forgot.

We won't be able to do anything this year but here are some ideas I came up with before I knew that.

7:00pm

I thought we could pass out invitations to our neighbors for a Family Ice Cream Night. Starting around 7pm, families could come, bearing their favorite ice cream topping. We'd provide the ice cream and cones/bowls (for later).

  • Name Tags

Make sure to meet and greet everyone (isn't that the point of the get together anyway...to get to know your neighbors?)

  • Neighborhood Map

Have a general sketch of our neighborhood so kids and their parents can pick out which house is theirs.

7:15pm

I was hoping to get our local police department or fire department to stop by and help out this night. I thought maybe they could do a short saftey talk to kids and parents.

It is recommended that you have a current photo of your kid, in case they go missing. Fingerprints also help. While the Police Dept never got back to me (it was County Fair time), I think they could help out with that sort of thing.

7:40pm

I was going to make up a scavenger hunt list for our surrounding neighborhood....to help us all get familiar with the alleys, houses, layout, etc. I would've included things to see or pick up like Rock from Old High School, House with Red Door, Yard with Morning Glory Tents, Dog with black spots, Wood chip from playground, Green Leaf from tree at and of street, House number of last two houses on so-and-so block, etc I would have them work in family teams.

8:00

I was hoping Target would help out with the items for a safety kit.

8:30pm

I was hoping to find a local business that would donate flashlights for this.

  • Went to Crazy Days (downtown street shopping in the wee hours of the morning)



  • Played Softball



  • Went to the County Fair





  • Picked Mushrooms
  • Went to Church
  • Ate with Friends
  • Played with Cousins
And that's just the start of our week!
