A recipe Collection

Okay, so I told you I'd post those recipes that we brought to the international potluck. So, here I am finally getting around to it. We ended up bringing Zucchini Bread, Fried Rice, and Chicken Curry.

Zucchini Bread


  • 1 cup sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 1/2 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp soda
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 1 cup grated, unpeeled zucchini
  • 1/2 cup chopped nuts (optional)

Beat sugar, oil, eggs until well blended. Add sifted dry ingredients and grated zucchini alternately to sugar mixture. Beat well. Stir in nuts. Pour into a greased bread pan. Bake @ 350 degree F for 50-60 minutes. Cool in pan 15 minutes.



Rena's Fried Rice


Seasoning:

  • 2 tsp sesame oil
  • 1/2 tsp salt
  • 2 Tbls soy sauce
  • 2 tsp sugar
  • 2 tsp ketchup
  • 1 tsp curry powder
  • 1/2 tsp pepper

Main Ingredients:

  • 2-3 cups cooked rice
  • 1 cup corn
  • 1/2 cup chopped carrots
  • 3 stalks spring onion tops
  • 1 bell pepper
  • 1/2 - 1 cup shrimp or hot dogs or sausages
  • mushrooms, cut up
  • 2-4 oz slivered almonds (for top_
  • 3 beaten eggs
  • dash salt (for eggs)
  1. In a large fry pan, heat 2 Tbl oil and fry the eggs with salt. When golden brown, cut and put aside.

  2. Add 2 Tbls oil in pan. Fry veggies and meat until done.

  3. Add cooked rice. Stir with veggies. Pour in seasoning sauce.

  4. Turn off stove and stir in onion.

  5. Mix in eggs.

  6. Serve in big bowl with slices of cucumber and slivered almonds on top.

Serves: 4-5 people
